Simple yet scrumptious red beans and rice recipe.
Red beans and rice is traditionally a dish of Louisiana Creole cuisine.
During the slave rebellion, in what is now known as Haiti, many sugar plantation owners fled to Louisiana, which was also possession of France at the time. They Purchased with them red beans from the Caribbean. Red beans and rice was created by settlers in the kitchens of the New Orleans French Quarter.
This dish can be made with the customary Louisiana red beans or it can be made with red kidney beans.
As you may know, beans and rice are acknowledged as being low in calories, high in several vitamins. Beans are also high in fiber. So you can't go wrong with tasty beans and rice meal.
RED BEANS AND RICE RECIPE:
prep time: 10 minutes
cook time: 25 to 30 minutes
Serves: 4
Ingredients:
- 2 cups cooked rice
- 1 large can 27oz of red kidney beans
- 1/2 lb smoked ham steak, cut into small cubes, or 6oz
- piece of salt-cured smoked pork
- 3 cups of water
- 1/4 tsp soy sauce
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/4 tsp paprika
- 1 bay leaf
- 1/4 tsp crushed thyme leaves
- 2 tsp concentrated chicken stock (it used to be hard to find
- but now, Knorr has one and it works quite well)
Directions:
- Rinse the beans in a colander and set them aside. Cook rice according to package directions.
- Cut ham steak into small bite-size pieces and fry in a small skillet until well browned. If you are using the salt pork, place it in the pot as it is.
- Place water in a 6qt. stockpot. Add cooked ham, 1 cup of the rinsed kidney beans, soy sauce, onion powder, garlic powder, paprika, bay leaf, thyme leaves, and chicken stock. Bring to a boil, lower heat and simmer for 20 minutes, stirring occasionally.
- After 20 minutes, take a potato masher and coarsely mash the beans in the pot to thicken the mixture. It will only take a few down presses with the masher. (you may need to add a little water at this point) Add the remaining rinsed beans to the pot and cook for another 5 minutes. Serve over rice.
